Endozym Glucapec is an enzymatic preparation formulated for the treatment of wines that are rich in Glucans and Pectins derived both from botrytized grapes and from yeast cells-walls. It may be utilized on musts or finis hed wines. Endozym Glucapec hydrolyzes colloids, in this way facilitating fining and filtering down the line. Ideally this enzyme should be utilized between 60 – 78°F, and is never to be used in conjunction with bentonite.
Utilization: Dilute in 20 – 30 parts wine with low SO2 or demineralized water and add directly to the must or to the wine.
Dosage: 2 to 4 mLs/hL, (75 – 150 mL/1,000 gallons) (higher temperatures allow the lower dosages).
Shelf life: Stable at room temperature (less than 24°C (75°F)) for 3 years.
