ABOUT FERMOL PREMIER CRU
- Controlled by the “Instituto Universitario della Vite e del Vino” Oenology laboratories, University of Borgogna, Digione (France)
- This is a yeast selected for the production of structured red wines that are meant to be aged.
- Premier Cru produces a high level of polysaccharides and extracts tannins and color from the grapes. It respects the aromatics of the varietal, therefore it is versatile and ideal for big reds produced by different grapes like Pinot Noir, Merlot, Sangiovese, Cabernet and Syrah.
- It does not do well at low temperatures and it requires an adequate nutrition.
- ml bacteria benefits from the usage of this yeast because it is a low producer of SO2.
